Make Their Heart Melt with Ice Cream

This Valentine’s season, share the love—one sweet, creamy, perfectly scooped bite at a time—with our special edition flavors made to love. From first scoops to first sparks, we’ve seen our fair share of love stories and have a passion for crafting flavors that bring people together. 

This February, Clumpies Ice Cream Co. offers four featured flavors with three returning tastes and one new one! Raspberry Stracciatella, Chocolate Lava Cake, Red Velvet Cake and Strawberry Fudge Brownie. These flavors are available for a limited time at all Clumpies scoop shops – Northshore, Southside, St. Elmo and are available for purchase online.  

Our goal – and yours, too – is for love at first bite. Each scoop of Clumpies is handcrafted here, nine gallons at a time, in Chattanooga using the finest ingredients. Each batch starts with fresh milk and cream that we pasteurize into our ice cream mix. Housemade sweets are then added – a savory selection of cookies, cakes, chunks, jams, fudges and sauces – giving Clumpies its one-of-a-kind taste. The frozen mixture is churned using a micro-batch process that meticulously ensures every scoop of Clumpies is rich and creamy. 

Making its Clumpies debut, Raspberry Stracciatella is a vanilla scented ice cream with tart swirls of raspberry sauce and flecks of chocolate stracciatella. This is a smooth, creamy, vanilla flavored pallet with pops of tart, sweetness, and chocolaty flavors. 

We take fresh raspberries and add sugar in a large pot over a low heat. Once the raspberries have broken down and a smooth sauce form, we strain it to remove any seeds and set it aside to cool. The sauce is then variegated during extraction to provide many layers of sweet, tart sauce.  

Stracciatella chocolate is a liquid chocolate (a mixture of dark chocolate callets and oil) that is introduced to the ice cream mixture when it is halfway frozen. Once this liquid chocolate hits the cold ice cream, it chips into little pieces and creates the shards of chocolate found in the finished ice cream.  

Chocolate Lava Cake returns as another Clumpies’ favorite – a silky chocolate ice cream with moist chocolate lava cake clusters and ripples of rich fudge sauce. This has a smooth creamy rich pallet. 

Our Chocolate Lava Cake is a play on the classic dessert. We start by baking large sheets of rich chocolate cake and then poke holes in it, after which a smooth chocolate pudding is soaked into the cake, helping the cake retain its moistness when frozen in the ice cream.  

The dessert is completed with a delectable fudge sauce that is added between the layers of ice cream and cake. 

A Clumpies classic, Red Velvet Cake is a tangy cream cheese ice cream with moist red velvet cake, bursting with mini chocolate chips. We take our sweet cream ice cream recipe and then add roughly two lbs. per ice cream tub of softened cream cheese directly into the pasteurizer. The finished product is a tangy, sweet, cream cheese ice cream. In this capacity, it perfectly emulates the iconic cream cheese buttercream that typically tops red velvet cake. 

The distinct flavors of red velvet cake come from the buttermilk, vinegar, and cocoa powder in the recipe, which create a velvety, slightly acidic, kindred-to-chocolate cake. We take this flavor to the next level by adding mini chocolate chips and enveloping the cake pieces in our cream cheese ice cream. 

Expect a creamy, tangy, chocolaty experience with chewy bites. 

Strawberry Fudge Brownie is a smooth strawberry ice cream with swirls of rich fudge sauce and bite-sized chocolate chip brownie pieces. 

This flavor starts out as our classic strawberry ice cream made with roasted strawberries. The pure strawberry flavor and chucks of real strawberries add brightness and texture to contrast the creamy, chewy chocolate inclusions – fudgy brownies baked with mini chocolate chips that are chopped into bite-size pieces, topped off with a rich fudge sauce. 

Chocolate lovers will adore this fruity, fudgy, chocolaty rich flavor.
